Every winter Dimitrios Avramoulis a farmer of Vlach origin who led a nomadic life with his animals, every autumn he went down to the fertile plains of Parapotamos to a village in Tempi near the city of Larissa and in the spring he went up to one of the most widespread mountain villages in Greece , the widely known Samarina.

Throughout this long journey, he collected the aromas of nature in his milk and made a unique kind of cheese for people with a very fine taste. In the years that followed, the family began to increase their cheese production by also using the milk of other farmers in the area.
