- We place our vegetables in a bowl after we have cut them into large pieces.
- We prepare the sauce. Put the olive oil, balsamic vinegar, honey, salt and pepper in a bowl. Mix until you have a thick sauce.
- Add most of the sauce to our vegetables and mix
- Place the feta cut in two pieces on top of the vegetables and add the rest of the sauce we reserved. Alternatively, we can pass the feta slice through a pan with 1 tablespoon of olive oil just enough to heat it up.
- Serve with fresh thyme
