For the minced meat
- Heat 5 tablespoons of olive oil in a saucepan. After it burns, add the minced meat and saute it.
Caution: do not stir it too much because then it will release its liquid and boil. - After it gets a little color we can at this point extinguish it with wine. After it evaporates, add a dry chopped onion. Mix and add salt and pepper. Optionally we can add a little cinnamon.
- Add the tomato sauce and sugar.
- Cover with the lid, lower the heat and cook until most of the liquid has evaporated
For the pasta
- Put a pot of water on the fire to boil. As soon as the water boils, add 1 tablespoon of salt.
- Put in the pasta and cook according to the instructions on the package
- Remove from the heat and strain
- Add 1 tablespoon of olive oil to the pasta and mix
For serving
- Divide the pasta on plates. Add minced meat on top and sprinkle with grated kefalotiri Avramoulis and add chopped parsley
